Poongar Idly/ Dosa

INGRIDENTS

1cup Poongar Rice

1/4cup Urad Dal

1/3cup Idly Rice

1/4tsp Fenugreek

Salt to taste

METHOD TO PREPARE

Wash the rice well for couple of times and soak them all in water overnight or for 6-8 hours.

After the stipulated time of soaking, drain excess water and grind poongar rice, idly rice, urad dal together into a smooth batter.

Grind the urad dhal into a smooth batter.

Mix both together and add salt and allow to ferment.

Grind them all with hing along with the soaked water little at a time until smooth.

The finished batter should neither be too thick nor runny.

Once fermented, give the batter a good stir to mix well.

Add salt only to the portion that you will use now.

The softness of the idly depends on the urad dal you use.

Pour some water to the idly maker once it starts to boil place the idly plate grease it with oil ladle out the batter and pour.

The same batter can be used for making dosa.

Serve hot with a chutney of your choice.
