INGRIDIENTS
1 cup Black Rice
31/2 Cups Water
1 cup Milk
3 Cardamom Pods
3tsp Ghee
10 Cashews nuts
Raisins, a fistful
METHOD TO PREPARE
To begin making Karunkuruvai Arisi Kheer recipe, wash and soak the rice overnight. And the next morning transfer the soaked rice along with the water and pressure cook for about 5 to 6 whistles then, turn down the flame and cook for about 5minutes. Turn off the flame and allow the pressure to release naturally.
Suppose, if you haven’t soaked the rice the previous night but you want to make kheer the same day, soak the black rice for an hour and pressure cook for 14 to 15 whistles by adding 4cups of water.
Once the pressure releases, mash the rice using masher or ladle. In a heavy bottom pan, add in the mashed cooked rice, 1 cup of milk, crushed cardamom and jaggery mix well.
Cook until it turns thick and porridge consistency. Now, switch off the flame. And in a separate pan, fry the raisins and cashews in ghee and add it to the kheer.
Mix well and serve hot.
